Chhuya Yogurt Ilish Recipe

Ingredients

⦁ 4-5 pieces of hilsa fish (ilish)

⦁ 1/2 cup tok doi (sour yogurt)

⦁ 1/2 teaspoon garlic paste (rasun bata)

⦁ 1/2 teaspoon ginger paste (ada bata)

⦁ 1 tej pata (bay leaf)

⦁ 2 tablespoons finely chopped onion (peyaj bata)

⦁ 2 tablespoons thinly sliced onion (peyaj mithi kore kata)

⦁ 1 tablespoon ghee (ghi)

⦁ 7-8 green chilies (kancha morich)

⦁ Salt, to taste

⦁ Water and oil, as needed

Cooking Method

⦁ First, thaw the fish pieces from the freezer and wash them well.

⦁ Rub the fish pieces with salt, garlic paste, and ginger paste. Set aside for 15-20 minutes.

 Prepare the Yogurt Mixture:

⦁ In a bowl, whisk the tok doi (sour yogurt) until smooth.

⦁ Add the finely chopped onion, bay leaf, and a pinch of salt. Mix well.

Assemble and Steam:

⦁ Take a heatproof dish or a steel container suitable for steaming.

⦁ Grease the dish lightly with oil.

⦁ Arrange the marinated fish pieces in the dish.

⦁ Pour the yogurt mixture over the fish pieces.

⦁ Place the sliced onions and green chilies on top.

⦁ Drizzle ghee over the top.

Steam:

⦁ Heat water in a steamer or a large pot.

⦁ Place the dish with the fish and yogurt mixture in the steamer.

⦁ Cover and steam on medium heat for about 15-20 minutes, or until the fish is cooked through.

 Serve:

⦁ Once cooked, remove from heat.

⦁ Serve hot with steamed rice.
